Cocoa&Espresso Muffin
















12 muffins

  • 250g Cake flour (King Arthur Queen Guinevere Cake Flour)
  • 1tbsp Baking powder
  • 1/4 tsp salt
  • 1tbsp Cocoa powder
  • 1tsp Espresso powder
  • 1stik Unsalted butter
  • 100g Sugar
  • 2 Eggs
  • 150cc Skimmilk
  • 2tbsp Mayonnaise

Preheat the oven to 350°F
Set the paper in the muffin bake pan.

  1. Mix together cake flour, baking powder,salt, Cocoa powder and Espresso powder.
  2. In a medium-sized mixing bowl, Soften unsalted butter and sugar still smooth.
  3. Stir Eggs, milk and mayonnaise into the butter mixture.
  4. Stir the mixed flour into the butter mixture.
  5. Bake the muffin for 25 minutes.
