Yogurt and Broccoli Meal Muffin


I used the nonfat yogurt and the fat free skim milk.
A muffin is 98 calories.

12 muffins

    * 1 Golden yukon potato, cut 1/2inch diced
    * 1/4 White onion, Thinly sliced
    * 1 Broccoli, cut to 12
    * 1 Tbsp Shredded Parmesan cheese

    * 250g Cake flour (King Arthur Unbleached Cake Flour)
    * 1 tbsp baking powder
    * 1 tsp salt

    * 1 Stik Unsalted butter(110g)
    * 20g Suger
    * 2 Eggs
    * 100cc Skim milk
    * 70cc Nonfat Yogurt
    * 2 tbsp Mayonnaise

Preheat the oven to 350°F
Set the paper in the muffin bake pan.

   1. Cook Potato in microwave.
   2. Cook White onion in microwave.
   3. Cook broccoli in microwave

   4. Mix together cake flour, baking powder and salt,
   5. In a medium-sized mixing bowl, Soften unsalted butter and sugar still smooth.
   6. Stir Eggs, milk and mayonnaise into the butter mixture.
   7. Stir the mixed flour, potato and onion  into the butter mixture.
   8. Pour the butter mizture 12 muffin pan.
   9. Put cooked broccoli, and sprinkle the parmesan cheese on the top.
  10. Bake the muffin for 25 minutes.
